Why are potato and rice hypoallergenic carbohydrate sources?

Gluten is present in grains that are commonly used as a carbohydrate source in foods. Wheat and corn are gluten containing grains and are the main carbohydrate sources in a wide array of products (e.g. macaroni and spaghetti). Some animals are intolerant to gluten and should therefore be fed gluten-free food. Potatoes and rice belong to the hypoallergenic carbohydrate sources, because gluten are absent in these foodstuffs.
